This was my dad’s favorite dessert, after anything chocolate. We called it monster because you wanted to eat it all up as soon as it came out of the oven. It’s actually a traditional Greek dessert called, “Galatoboureko (γαλακτομπούρεκο),” meaning “Milk-pie.”

Monster (Galatoboureko)

Ingredients

1/3 pound filo (8 sheets for bottom/10 for top)

1/2 pound butter (rendered)

1/2 gallon whole milk

1 cup cream of wheat

3 T. all purpose flour

1/2 cup sugar

6 eggs

Directions

Cook cream of wheat and flour in milk until thickened. Cool. (You can place pan in a bowl of ice, stirring occasionally to speed the process.) Cover with waxed paper pressed against cooked cream of wheat to keep film from forming on top.

In large bowl, beat eggs, add one cup of the cream of wheat and mix well. Add remaining cream of wheat, one cup at a time.

Brush 9×12 pan with melted, rendered butter. Layer filo (8 sheets) buttering between each sheet and let hang over sides of pan. Pour in custard mixture. Fold in overhanging sheets of filo and butter between each. Add ten layers of filo, buttering between each on top.

Cut through top layer only, lengthwise, three times. Bake in preheated oven at 400 degrees for 15 minutes. Lower temperature and bake 30-45 minutes more (until knife inserted in center of custard comes out clean).

Remove from oven. Pour simple syrup over all. Let cool, then store in refrigerator. Allow to cool 4 hours before cutting.

Simple Syrup

Ingredients

3 cups sugar

2 cups water

1 (1/4” ) slice lemon

Directions

Mix water and sugar together in saucepan and cook over medium heat until sugar melts and drips from side of spoon.

Add lemon slice and let cook additional 3-5 minutes longer.

Pour over baked dessert 1 cup at a time, very slowly. Give pastry ample time to absorb each cupful.

My mother used to make these really delicious, healthy applesauce cookies. But now she can’t find the recipe. I was really little so all I remember is they were made with applesauce and probably whole wheat flour. They had raisins, and were very soft and fluffy. Also, I know they didn’t have oatmeal. Can you help me find this recipe?

I looked around a lot of different places and found a lot of applesauce cookie recipes that included oatmeal. Finally, I found one without. This recipe also has nuts, but I’m sure you can exclude those.
